African Beef and Peanut Stew with Berbere Spice

You don't need winter and fall to enjoy a bowl of spicy, hearty, and very fragrant peanut stew served over rice and naan. This African Beef and Peanut Stew with Berbere Spice will definitely make your cold nights warmer plus, since this recipe has a lot of variations, there's very little you can do to screw it up!

Serves 6


  • 1 1/2 pounds
  • beef stew meat
  • 2 cups
  • onion, chopped
  • 2 cups
  • carrots, chopped
  • 2 tablespoons Berbere spice
  • 3 cups
  • low fat beef broth
  • 1/2 cup
  • peanut butter, creamy
  • 3 cups
  • brown rice, cooked
  • 1/2 cup
  • water
  • 3 tablespoons cornstarch 


  1. Trim and cut beef into bite sized pieces. Arrange onions in the bottom of a slow cooker liner coated with cooking spray. Top with beef and carrots. 
  2. Sprinkle with the Berbere seasoning.
  3. Combine the beef broth and peanut butter in a small mixing bowl.
  4. Pour mixture over the beef and vegetables. Cook on low 8 to 10 hours.
  5. Turn to high 30 minutes before serving. Combine the water and cornstarch in a small mixing bowl. Add to stew mixture and simmer until thickened; approximately 30 minutes.
  6. Serve over rice with naan.
