Trim and cut the meat to make a long slender slab that you can roll. Be careful you don't leave any bones behind when you're slicing the meat.
Add all the seasoning (1 tsp dried chili pepper flakes, 2 tbsp of harissa spice, 1/2 tsp of paprika, 3 tbsp of olive oil, Kosher salt and pepper.
