Vadouvan-Roasted Cauliflower

Preheat your oven to 450° and prepare a rimmed baking sheet. In a large bowl, toss the cauliflower florets in a mixture of the vadouvan spice, olive oil and salt. Gently pour onto the baking sheet, patting into a uniform layer. Place in the oven, tossing lightly every ten minutes, for 30-35 minutes, or until cauliflower is fork-tender and browned, and remove from oven. Transfer to paper towels to drain before serving.
