Sesame Spice Rice Noodles

It's almost weekend and you just want to spend your weeknights at home on your fave couch? Why not do it with a heaping bowl of spicy noodles and just dig in and savor to its yummy goodness bite by bite with Sesame Spice Rice Noodles!

Ingredients

  • 8 ounces rice stick noodles, cooked according to package instructions
  • 3-4 tablespoons low-sodium tamari or soy sauce or to taste*
  • 2½ tablespoons rice vinegar
  • 1 Tbsp Sesame Oil
  • 1 Tbsp Sesame Spice
  • 1 to 1½ tablespoons chili-garlic sauce, depending on desired heat*
  • 1 tablespoon almond butter
  • ½ teaspoon pure maple syrup
  • 1-2 cups baby arugula

Instructions

  1. Add your cooked rice noodles to a large serving bowl.
  2. In a small bowl, whisk together the tamari or soy sauce, rice vinegar, sesame oil, sesame spice, garlic-chili sauce, almond butter, and pure maple syrup.
  3. Add the dressing and the arugula to the rice noodles and toss.
  4. Divide the rice noodles up between 2-4 plates and serve.
  5. Refrigerate leftovers.
