Thai Coconut Rice

A bowl of fluffy, creamy thai coconut rice is only 15 minutes away with this clever recipe, which incorporates thai food spices directly into the cooking water for a true infusion of thai spice flavor.

Thai Coconut Rice


  • 2 Tbsp toasted dried unsweetened coconut (optional)
  • 2 Tbsp thinly sliced green onions (optional)

In a 4-quart saucepan, combine the coconut milk, vegetable broth, rice, thai spice blend, and salt and heat to a boil. Reduce heat to low and cover the pan, allowing it to simmer for 15 minutes or until rice is tender and cooked through. Remove from heat and allow to stand for 10 minutes prior to enjoying; sprinkle with green onions and dried coconut for an extra pop of flavor, if desired.
