Ingredients:
Lentil Soup
- 3 Tbsp (45 mL) Olive oil
- 1 Medium onion (chopped)
- 2 Garlic cloves (minced)
- 1 Tbsp (15 mL) Paprika
- ½ tsp (2.5 mL) Turmeric powder
- ¼ tsp (1.25 mL) Ground cinnamon
- ½ tsp (2.5 mL) Cumin (ground)
- ½ tsp (2.5 mL) Ground black pepper
- 1 Medium tomato (chopped)
- 1 Small sweet red bell pepper (chopped)
- 1 Small carrot (chopped)
- 1½ cups (270 g) Split red lentils (washed)
- 8 cups (2 litres) Water
- 1 tsp Xawaash Spice + 2 tsp salt
Garlic & Cumin Oil
- 3 Tbsp (45 mL) Olive oil
- 1 Garlic clove (sliced)
- ½ tsp (2.5 mL) Cumin (ground)
Instructions:
- Using medium heat, saute the chopped onion with 3 tablespoons of olive oil for 3 minutes, then add the garlic.
- Add the paprika, turmeric powder, ground cinnamon, ground cumin, ground black pepper, and stir well.
- Add the chopped tomatoes and stir well. Add the bell pepper and carrot and cook for 5 minutes. Then add the lentils and water.
- Add the Xawaash spice and salt and stir well.
- When it comes to a boil, cover and cook over low heat for 45 minutes.
- Blend until smooth.
- Using low heat, fry the sliced garlic in 3 tablespoons of olive oil until golden brown.
- Remove the fried garlic, then add the cumin and turn off the heat.
