Chicken Red Curry

Ingredients

  • 1.76 Ounce (50 grams) USIMPLYSEASON Red Curry paste
  • 12.34 Ounce (350 grams) chicken thigh fillet cut into pieces
  • 2 cans (320 ml) coconut cream
  • 2 tablespoons fish sauce
  • 1 tablespoon palm sugar
  • 3 - 4 lime leaves, into strips
  • 2 red peppers, cut into rings

How to make…

  1. In a pan, heat the coconut cream and add one-sachet of USimplySeason Thai Red curry paste.
  2. Bring the mixture to a boil until red oil appears on the surface. This takes 15 - 20 minutes.
  3. Add fish sauce and palm sugar to taste and stir well.
  4. Add chicken, and cook until tender.
  5. Garnish with strips of lime leaves and the rings of red pepper.
  6. Serve with steamed jasmine rice.
