Ingredients

For the Noodles

  • 12 oz noodles (ramen, udon, soba, or spaghetti)
  • 1 tbsp sesame oil
  • 1 tbsp neutral oil (avocado, canola, or vegetable)
  • 3 cloves garlic, minced
  • 1-inch piece ginger, minced
  • 2 tbsp soy sauce (or tamari for gluten-free)
  • 1 tbsp rice vinegar
  • 1 tbsp honey or maple syrup
  • 1 tbsp toasted sesame seeds
  • 2 tsp USimplySeason Togarashi (adjust to spice level)

For Garnish & Add-Ins

  • 2 green onions, sliced
  • 1/4 cup cilantro, chopped (optional)
  • 1/2 cup shredded carrots or thinly sliced cucumber
  • 1/2 cup edamame or snap peas
  • 1 tbsp toasted sesame seeds

Instructions

  1. Cook the Noodles – Boil the noodles according to package instructions. Drain, rinse with cold water, and toss with 1 tsp sesame oil to prevent sticking.
  2. Make the Sauce – In a pan, heat neutral oil over medium heat. Add garlic and ginger, sautéing until fragrant (about 30 seconds).
  3. Season & Simmer – Stir in soy sauce, rice vinegar, honey, sesame seeds, and USimplySeason Togarashi. Simmer for 1-2 minutes to let the flavors meld.
  4. Toss Everything Together – Add the cooked noodles and toss well to coat. Cook for another 1-2 minutes to absorb the flavors.
  5. Garnish & Serve – Remove from heat and top with green onions, cilantro, shredded carrots, edamame, and extra sesame seeds. Serve with lime wedges for a citrusy finish.

Serving Suggestions:

  • Add Protein: Try it with tofu, grilled chicken, or shrimp.
  • Crunch Factor: Top with crispy shallots or crushed peanuts.
  • Milder Option: Reduce the Togarashi to 1 tsp if you prefer less heat.

🔄 Variations & Add-Ons:

  • Mild Version 🌿 – Reduce USimplySeason Togarashi to 1 tsp for a milder flavor.
  • Extra Nutty Twist 🥜 – Add 1 tbsp peanut butter or tahini to the sauce for a creamy, rich flavor.
  • Citrus Boost 🍋 – Squeeze in fresh lime or yuzu juice before serving for a refreshing tang.
  • Protein-Packed 🍗 – Add grilled tofu, shrimp, chicken, or a fried egg for a heartier dish.
  • Veggie Loaded 🥦 – Toss in sautéed mushrooms, bell peppers, bok choy, or shredded cabbage.
  • Crunchy Topping 🍘 – Garnish with crispy shallots, crushed peanuts, or furikake for extra texture.
  • Cold Sesame Noodles ❄️ – Serve chilled for a refreshing summer dish—just rinse the noodles with cold water after cooking.

⚠️ Troubleshooting Guide

❌ Noodles Sticking Together?

  • Toss cooked noodles with a little sesame oil right after draining to prevent clumping.
  • If they dry out, revive them with a splash of warm water while tossing with the sauce.

❌ Noodles Too Salty?

  • Reduce soy sauce and balance with a little extra honey or lime juice.
  • If already mixed, add more noodles or veggies to dilute the saltiness.

❌ Not Spicy Enough?

  • Increase the USimplySeason Togarashi by ½ tsp at a time.
  • Add a dash of wasabi powder or pickled ginger for a different kind of heat.

❌ Too Dry?

  • Add a tablespoon of warm water or a drizzle of sesame oil when tossing the noodles.
  • If making ahead, store with extra sauce to keep the noodles moist.
