Vadouvan Potato Butter Chicken Curry

A rich, comforting dish where tender chicken and creamy potatoes soak up the warm, aromatic flavors of USimplySeason Vadouvan. This butter chicken-inspired curry is perfect for cozy nights or impressive dinners.

Ingredients
- 1.5 lbs boneless chicken thighs, cut into chunks
- 2 tbsp USimplySeason Vadouvan
- 2 cups potatoes, peeled and cubed
- 1 cup tomato purée
- 1/2 cup heavy cream or coconut cream
- 1/4 cup plain yogurt
- 1 onion, finely chopped
- 1 tbsp ginger-garlic paste
- 1 tbsp butter + 1 tbsp oil
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Marinate chicken in yogurt, 1 tbsp Vadouvan, and salt for 30 minutes.
- Heat butter and oil in a pan; sauté onions until golden.
- Add ginger-garlic paste and remaining Vadouvan. Cook for 1–2 minutes.
- Stir in tomato purée and simmer until thickened.
- Add marinated chicken and potatoes. Sauté for 5 minutes.
- Pour in cream, cover, and simmer for 15–20 minutes until chicken and potatoes are tender.
- Garnish with cilantro and serve with steamed basmati rice or naan.
