A rich, comforting dish where tender chicken and creamy potatoes soak up the warm, aromatic flavors of USimplySeason Vadouvan. This butter chicken-inspired curry is perfect for cozy nights or impressive dinners.

Ingredients

  • 1.5 lbs boneless chicken thighs, cut into chunks
  • 2 tbsp USimplySeason Vadouvan
  • 2 cups potatoes, peeled and cubed
  • 1 cup tomato purée
  • 1/2 cup heavy cream or coconut cream
  • 1/4 cup plain yogurt
  • 1 onion, finely chopped
  • 1 tbsp ginger-garlic paste
  • 1 tbsp butter + 1 tbsp oil
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Marinate chicken in yogurt, 1 tbsp Vadouvan, and salt for 30 minutes.
  2. Heat butter and oil in a pan; sauté onions until golden.
  3. Add ginger-garlic paste and remaining Vadouvan. Cook for 1–2 minutes.
  4. Stir in tomato purée and simmer until thickened.
  5. Add marinated chicken and potatoes. Sauté for 5 minutes.
  6. Pour in cream, cover, and simmer for 15–20 minutes until chicken and potatoes are tender.
  7. Garnish with cilantro and serve with steamed basmati rice or naan.
